Swedish game meat

I’m lucky enough to spend this Christmas & New Year in Sweden in the town of Järna.

 Järna is located one hour by car from Stockholm, a small town and famous for sustainable organic food, natural products and also game meat. 

One of the shops is called De Vilda, they sell several kinds of wild meat such as dear moose and wild boar. The game meat rule is strictly controlled by the government as in number and which kinds of wild meat they may hunt. 

For example, they can hunt 700 of wild boars a year because of their population is growing and only allow to hunt inside of 30 kilometers of their shop. Also all wild meat must be inspected by Vet in order to be certified safe to eat.

Unlike farmed meat, the game meat of animals that ran around the mountains and danced in the sky, it is lean, firm, nutritious and healthy.

It has a natural taste, not a taste made for humans, and you can enjoy the individuality of the original ingredients. The ultimate natural product, the game meat cuisine taste wild and you appreciate the animal that now allow for a new generation to grow.  You will be grateful for your life!

My favorite recipe:

Ingredients

・500g meat
・1kg rock-salt
・2 eggs white
・Herbs (rosemary & thyme & Black paper )
・garlic

Procedure

marinate meat with herbs & Garlic
1: marinate meat with herbs & Garlic
(at least 30 minutes )

whisk egg white then mix with rock-salt. Cover the meat with salt mix

(don’t forget bottom part! )

3: bake at 200 degree in the oven

4: take off all salt then cut in slice
